INGREDIENTS

  • Original Haddock Bites
  • Handful of organic carrots, sliced
  • 1 yellow bell pepper sliced
  • 1 pint of organic cherry tomatoes
  • Fresh lemon wedges

Tzatziki Dip

  • 1 ½ cups of grated cucumbers (no need to remove peel)
  • 1 ½ cups of plain (unsweetened) Greek Yogurt
  • 2 tbsp of extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • ½ tsp of sea salt
  • 1 tablespoon finely chopped fresh dill
  • 2 garlic cloves finely minced
Tips from the chef: DIRECTIONS
  1. 1. Preheat your oven to 450°F and bake the haddock bites for 12-14 mins, flipping halfway.
  2. 2. Slice all your vegetables and assemble in a platter to form a rainbow.
  3. 3. Take your grated cucumber and place it in a cheese cloth or kitchen towel to squeeze/ring out excess moisture & transfer back to a bowl.
  4. 4. Add the olive oil, sea salt, yogurt, lemon juice, garlic and any herbs of your choice and stir.
  5. 5. Serve the tzatziki as a dip for your veggies & haddock bites; a delicious & healthier alternative to tartar sauce or ranch dip!
  6. 6. Enjoy!
