Haddock Bites Crudités Platter
This modern twist on a classic charcuterie board is a shareable crowd pleaser that switches out the heavy meats and cheeses for Summery seafood, tasty tzatziki and fresh vegetables.

- Original Haddock Bites
- Handful of organic carrots, sliced
- 1 yellow bell pepper sliced
- 1 pint of organic cherry tomatoes
- Fresh lemon wedges
Tzatziki Dip
- 1 ½ cups of grated cucumbers (no need to remove peel)
- 1 ½ cups of plain (unsweetened) Greek Yogurt
- 2 tbsp of extra virgin olive oil
- 1 tbsp fresh lemon juice
- ½ tsp of sea salt
- 1 tablespoon finely chopped fresh dill
- 2 garlic cloves finely minced
Tips from the chef: DIRECTIONS
- 1. Preheat your oven to 450°F and bake the haddock bites for 12-14 mins, flipping halfway.
- 2. Slice all your vegetables and assemble in a platter to form a rainbow.
- 3. Take your grated cucumber and place it in a cheese cloth or kitchen towel to squeeze/ring out excess moisture & transfer back to a bowl.
- 4. Add the olive oil, sea salt, yogurt, lemon juice, garlic and any herbs of your choice and stir.
- 5. Serve the tzatziki as a dip for your veggies & haddock bites; a delicious & healthier alternative to tartar sauce or ranch dip!
