Savoury Blue Cod & Chopped Chickpea Salad

Preparation

For the Fish

  • 1 package Pan-Sear Selects Savoury Herb Blue Cod

For the Salad

  • 1/4 cup Honey
  • 2 tbsp Dijon Mustard
  • 4 cup Romaine, shredded
  • 4 cup Iceberg Lettuce, shredded
  • 2 ea Canned Chickpeas, drained
  • 1 ea Canned Artichokes, drained
  • 2 cup Roasted Red Pepper Strips
  • 1/2 cup Sundried Tomatoes
  • 1 cup Grated Parmesan

For the Vinaigrette

  • 1/2 cup Extra Virgin Olive Oil
  • 1/2 cup Red Wine Vinegar
  1. Prepare the Blue Cod according to your preferred package cooking instructions.
  2. For the Dressing: Add the four ingredients to a small jar with a tight fitting lid. Shake well for 30-45 seconds to emulsify the dressing and reserve.
  3. For the Salad: Add all ingredients to a large bowl and toss well to combine
  4. To Finish: Divide the chopped chickpea salad equally between four large plates. Divide the reserved parmesan and use it to garnish the top of each salad. Top each salad with a fully cooked portion of Savoury Herb Blue Cod and enjoy!
