Crispy Breaded Sole & Spinach Goat Cheese Cream Sauce

This simple yet savory sauce comes together in a few mere minutes while your craveable sole cooks in the oven. Served alongside your favorite rice or grain this easy weeknight meal comes together simply without relying on too many fresh veggies during the cold winter months.

  • 1 pckg Signature Cuts Crispy Breaded Sole Fillets
  • 3 cups Fully Cooked Rice or Grain of Choice
  • 1 each Lemon, sliced into thin half moons

Spinach Goat Cheese Sauce

  • ¼ cup White Onion, minced
  • 3 each Garlic Cloves, minced
  • 2 tbsp. Unsalted Butter
  • 1 each Lemon, zested
  • 2 cups Light Cream
  • 8 ounces Frozen Chopped Spinach, defrosted and squeezed of excess moisture
  • 4 ounces Goat Cheese
  1. Prepare the crispy breaded sole according to the package instructions.
  2. While the sole cooks prepare your rice\grain of choice.
  3. In a large non-stick saute pan begin by melting the butter over a medium-high heat. Add the minced onions and cook for 2 minutes. Add the garlic and cook an additional 1 minute before adding the light cream, goat cheese and spinach. Simmer the sauce over a medium setting for 5-7 minutes until fully incorporated and slightly thickened. Add the zest of lemon before serving.
  4. To finish divide your rice equally amongst 6 plates. Serve the spinach sauce alongside and topped by the fully cooked breaded sole fillet. Garnish with a squeeze of juice from zested lemon, lemon wheels and fresh parsley if desired.
