Fish Stick Burrito
Load your burritos with crisply delicious sole fish sticks. No only they will add satisfying crunch and new flavor but also give a healthy protein alternative to your classic favourite.

- 1 box High Liner Sole Fish Sticks
- 2 lrg tortilla shells
- 1 can refried beans
- ¼ cup sour cream
- ¼ cup salsa verde
- ¼ cup shredded cheese
- ¼ cup coriander leaves, chopped
- Mexican style hot sauce
- ¼ cup pico de gallo (optional)
For the rice
- 1 cup white rice
- ¼ cup white onions, diced
- 1 cup mild salsa
- 1 ¾ cups water
- ½ tsp chili powder
- ½ tsp cumin
- 1 tbsp olive oil
- Cook fish sticks according to box directions
- For the rice, sweat onions and oil in a small pot for about 2-3minutes then add rice and continue to cook until onions just start to turn brown. Then add remaining rice ingredients, bring to a boil then turn down to light boil. Once rice has reached the tunneling stage (where you can see little tunnels of water evaporating) turn down the heat to low and cover with a lid until all water has been absorbed.
- Combine salsa verde and sour cream to make the burrito sauce
- Assemble burritos by filling tortilla with desired amount of refried beans, cooked rice, fish sticks (5-6pieces) burrito sauce, cheese, pico de gallo, coriander and hot sauce. Fold edges and wrap up tight.
- Preheat a skillet to medium heat. Place each burrito fold side down into the skillet to seal the edges. If desired slice in half and serve and /or wrap in tinfoil for a road worthy meal.
