Spice up taco Tuesday with this quick recipe that comes together easily with crispy Haddock Bites and Tex-Mex toppings.

- 1 box Original Haddock Bites or Roasted Garlic & Herb
- 4 tbsp water
- 4 cup chopped lettuce
- 2 cup halved cherry tomatoes
- 1 cup canned corn
- 8 tbsp diced red onion
- 1 avocado, diced
- Dressing of choice (salsa, lime crema or burrito sauce work well!)
- Lime wedges and tortilla chips
- Optional: taco seasoning

- Cook Haddock Bites according to package instructions.
- Prepare your salad by adding lettuce, tomatoes, corn, onion and avocado to a medium bowl.
- Top salad with dressing of choice and Haddock Bites. For an extra taco-kick, lightly dust Haddock Bites with taco seasoning before placing on salad.
- Serve with lime wedges and tortilla chips as desired.
