- 4 High Liner Signature Cuts Wild Caught Salmon Fillets
- 1/2 cup sliced zucchini
- 8 asparagus
- 1/2 cup of cherry tomatoes roasted
- 1/2 cup sliced red onion
- 1/4 cup basil
- 1/4 cup pine nuts
- 1/4 sun-dried tomato in oil
- 1 cup orzo
- Salt and pepper to taste
- Preheat oven and coat frozen salmon with oil from sun-dried tomato, salt and pepper.
- Cook Signature Cuts Wild Caught Salmon Fillets according to package instructions.
- While salmon is baking, prep the veggies by slicing the zucchini and red onion.
- Grill zucchini, red onion, cherry tomatoes and asparagus. Sprinkle with salt.
- Dice sundried tomato and add into a bowl with basil and pine nuts.
- Cook orzo according to package instructions and place them at the bottom of the plate or bowl.
- Top with grilled veggies, salmon and garnish with sun-dried tomato salsa. Season with salt and pepper to taste!
