- 2 High Liner Pan-Sear Selects Wild Caught Sole Fillets, Parmesan Herb
- 1/4 cup capers with the liquid
- 1/2 cup cherry tomatoes
- 1/2 cup sliced red onion
- 1/4 cup basil
- 1/4 cup Italian parsley
- 1/4 cup pine nuts
- 1 lemon
- 1/2 cup chicken stock
- 1 package of spaghetti
- Salt and pepper to taste
- 2 tbsp olive oil
- Cook High Liner Pan-Sear Selects Wild Caught Sole Fillets according to package instructions (pan-sear is preferred method).
- While sole is in the pan, prepare your vegetables. Sauté red onion in a pan with olive oil for 5 minutes on medium heat. Add in capers and cherry tomatoes. Continue to sauté for 5 minutes.
- Turn heat to medium and add in chicken stock and caper liquid. Reduce until liquid is halved.
- Cook spaghetti according to package instructions.
- Toss in cooked spaghetti to coat, garnish with fresh herbs, lemon zest and a pinch of salt.
- Place spaghetti in a pasta bowl and top with High Liner Pan-Sear Selects Wild Caught Parmesan Herb Sole Fillets.
