Tex-Mex Tortilla
- 1 package High Liner Jumbo Popcorn Shrimp
- 1 tsp Chili Powder
- 4 ea Flour Tortilla
- 2 ea Avocado, Ripe
- 2 tbsp Lime Juice
- 2 tbsp Cilantro
- 300 mL Roasted Red Peppers 1 jar of sliced
- 2 cup Mozzarella grated cheese
- 2 ea Lime, sliced in half for garnish
- 1 ea Jalapeno
- 2 tbsp Salted Butter
Fry Seasoning
- 1 bag Frozen French Fries
- 1 tsp Chipotle Chili Powder
- 2 tbsp Cilantro, fresh finely chopped
- 1/2 tsp Garlic Powder
- 1 ea Lime, zest
- 1 tsp Salt
- For the Seasoned Fries & Shrimp: In a bowl stir together all seasoning for the fries. Toss frozen fries to coat.
- Place Jumbo Popcorn Shrimp on a sheet pan with seasoned Tex-Mex fries on the same pan. Cook as directed on packaging.
- For the Tex-Mex Tortilla: In a small bowl smash together the flesh of the ripe avocado along with the lime juice and cilantro. Set aside.
- Place the tortilla shell on a cutting board and cut a straight line from the center of the tortilla to the bottom edge. Imagine the tortilla in four quadrants. Spread the smashed avocado in one quadrant. Lay drained roasted red peppers on the second quadrant, third quadrant place the cooked jumbo shrimp sprinkled with Chile powder, and to the last quadrant add the mozzarella cheese with jalapeno.
- Fold the avocado quadrant onto the roasted red pepper quadrant. Fold the double layer onto the Jumbo Shrimp quadrant, then fold onto the mozzarella. You will be left with a triangle.
- Heat butter in a nonstick skillet over medium heat. When the butter has melted, add the tortilla, and cook until golden and crisp on the outside, 2 to 3 minutes per side. Remove from the pan, repeat as necessary and enjoy!
