Greek Fish Pita with Caper-Herb Yogurt

Crispy Breaded Haddock gets the Greek treatment in this light and fresh pita that’s seasoned with a piquant Caper-Herb Yogurt. This meal comes together in less time than it takes to bake the fish and is great for lunch time or on the go situations.

Greek Fish Pita

  • 1 Box Signature Cuts Breaded Haddock
  • 5 each Whole Wheat Pita
  • ¾ cup Cucumbers, diced
  • ¼ cup Pitted Olives, sliced thin
  • ½ cup Cherry Tomatoes, sliced
  • ½ cup Bell Peppers, diced
  • 1 ¼ cups Mixed Greens or Sprouts

Caper-Herb Yogurt

  • ¾ cup Non Fat Plain Greek Yogurt
  • ¼ cup Capers, chopped
  • 2 tbsp. Dill, chopped
  • 1 tbsp. Parsley, chopped
  • 1 tbsp. Basil, chopped
  • 1 tbsp. Garlic, minced
  • 2 tbsp. Honey
  • 1 tbsp. Lemon Juice
  1. Prepare Crispy Breaded Haddock according to package instructions.
  2. For the Caper-Herb Yogurt mix together all 8 ingredients in a small bowl.
  3. To assemble the Greek Fish Pita spread approximately 2 tbsp of yogurt across the center of a pita. Toss together the cucumbers, olives, tomatoes and peppers in a small bowl and add approximately 1/3-1/2 cup to each pita. Next add a Crispy Haddock fillet and about ¼ cup of fresh greens or sprouts. Serve and enjoy!
