Greek Fish Pita with Caper-Herb Yogurt
Crispy Breaded Haddock gets the Greek treatment in this light and fresh pita that’s seasoned with a piquant Caper-Herb Yogurt. This meal comes together in less time than it takes to bake the fish and is great for lunch time or on the go situations.

Greek Fish Pita
- 1 Box Signature Cuts Breaded Haddock
- 5 each Whole Wheat Pita
- ¾ cup Cucumbers, diced
- ¼ cup Pitted Olives, sliced thin
- ½ cup Cherry Tomatoes, sliced
- ½ cup Bell Peppers, diced
- 1 ¼ cups Mixed Greens or Sprouts
Caper-Herb Yogurt
- ¾ cup Non Fat Plain Greek Yogurt
- ¼ cup Capers, chopped
- 2 tbsp. Dill, chopped
- 1 tbsp. Parsley, chopped
- 1 tbsp. Basil, chopped
- 1 tbsp. Garlic, minced
- 2 tbsp. Honey
- 1 tbsp. Lemon Juice
- Prepare Crispy Breaded Haddock according to package instructions.
- For the Caper-Herb Yogurt mix together all 8 ingredients in a small bowl.
- To assemble the Greek Fish Pita spread approximately 2 tbsp of yogurt across the center of a pita. Toss together the cucumbers, olives, tomatoes and peppers in a small bowl and add approximately 1/3-1/2 cup to each pita. Next add a Crispy Haddock fillet and about ¼ cup of fresh greens or sprouts. Serve and enjoy!
