Lime Chilli Tilapia with Chinese Vegetable Stir-fry

  • 1 package High Liner Lime Chilli Tilapia - Pan-Sear Selects®

Vegetable stir-fry

  • 3 teaspoons vegetable oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • ¼ cup carrot, sliced
  • 2 cups baby bok choy (almost 6 small heads), cut in half
  • ¼ cup shiitake mushrooms, stems removed and thinly sliced
  • ¼ cup red bell pepper, thinly sliced
  • ½ cup sugar snap peas, or snow peas, cut in half
  • 1/8 cup scallions as a garnish
  • 2 - 4 tablespoons Teriyaki glaze
  • 2 teaspoons sesame oil
  1. Cook High Liner Lime Chilli Tilapia - Pan-Sear Selects® according to package instructions.
  2. Meanwhile, Heat vegetable oil in a skillet/wok over medium-high. Add garlic and ginger; cook until fragrant, about 30 seconds. Add sliced mushroom, carrot, red bell pepper, snow peas, bok choy and saute for 2-3 minutes until veggies are almost tender.
  3. Add teriyaki glaze and cook for another 1 minute. Finish with sesame oil and scallions.
  4. Transfer the stir-fried vegetables to a platter and arrange fish on top and enjoy!
