Sole Almondine with Maple Glazed Green Beans
A classic dish that marries crispy pan seared Sole with roasted almonds and citrus butter sauce. Elegant, uncomplicated and a delicious balance of savoury spices and citrus notes.

- 1 box High Liner Pan-Sear Selects® Lemon Pepper Sole
- 2 small bundles of green beans
- ¼ cup sliced almonds
- 2 tbsp + 1 tsp cold butter
- 2 tbsp 35% cream
- 1 tbsp onions, minced
- ½ lemon, juiced
- 1 tbsp maple syrup
- 1 tbsp parsley, chopped
Tips from the chef: For added flavour add a splash of white wine when adding the lemon juice and cream in step 2.
- Heat a non-stick pan to medium low and add High Liner Pan Sear Lemon Pepper Sole. Cook for 16-17min flipping halfway.
- In a separate sauté pan, sweat minced onions with 1 tsp butter for a few minutes. Add in lemon juice and cream and reduce by half. Remove from heat and monte au beurre (mount with butter) by swirling the remaining butter into the sauce. Season to taste and finish with parsley.
- Fill a small pot with water, bring to a boil and add green beans. Cook to desired doneness, strain off water and mix cooked beans with maple syrup. Season to taste.
- Plate by drizzling butter sauce around the plate and over the beans and enjoy with the Pan Seared Lemon Pepper Sole.
