English Style Pollock Greek Salad

This classic salad brings together fresh summer ingredients, like tomatoes, cucumbers, basil and oregano. Feel free to add to it, with ingredients like kalamata olives and bell peppers. Also try grilling the onions to help bring out the sweetness and add a welcomed charred flavour to the dish.

  • 1 box High Liner English Style Battered Fillets
  • 3 cups cherry tomatoes, halved
  • 3 cups cucumbers, large dice
  • 1 cup red onion, sliced
  • ¾ cup feta cheese, diced
  • ¼ cup fresh basil, sliced

For the Greek Dressing (or purchase premade)

  • ½ cup olive oil
  • 1.5 tbsp fresh oregano, chopped
  • 1 tbsp fresh parsley, chopped
  • 1-2 lemon, juiced (approx. ¼ cup)
  • 1 tsp Dijon mustard
  1. Bake High Liner English Style Battered Fillets at 450°F for 22 mins flipping halfway
  2. Combine salad ingredients into a large bowl
  3. Place Greek salad dressing ingredients into a jar, seal with a lid and shake. Alternatively, ingredients can be combined using a bowl and a whisk.
  4. Pour dressing over salad, toss gently, and serve with English Style Battered Fillets.
