Cheesy Garlic & Herb Shrimp Dippers

- 1 package Pan Sear Garlic & Herb Shrimp
- 200 grams Fresh Mozzarella Cheese
- 1 cup Packed Fresh Basil
Arabbiata Sauce
- 2 tbsp. Olive Oil
- 2 tsp. Red Chili Flakes
- 1 tbsp. Fresh Garlic, minced
- 1 cup Crushed Tomatoes
Pesto Ranch Sauce
- 1 cup Packed Fresh Basil
- 1 tbsp. Fresh Garlic, minced
- 1 tbsp. Lemon Juice
- 1 tsp. Hot Sauce
- 2 tbsp. Olive Oil
- ½ cup Greek Yogurt
- ½ cup Buttermilk
- 1 tbsp. Fresh Dill
- Prepare the shrimp according to the oven cooking instructions.
- Preheat a large non stick saute pan to medium high heat, add the olive oil and garlic before cooking for one minute until translucent. Add the pepper flakes and stir once before adding the crushed tomatoes. Bring the tomatoes to a simmer for 5 minutes before removing from the heat.
- Prepare the ranch by placing all ingredients into the bowl of a food processor and blending on high for approximately 1 minute until fully incorporated.
- When the shrimp are fully cooked and golden brown remove the pan form the oven. Add a small slice of mozzarella cheese to one side of each shrimp. Return to the oven and cook for 1-2 minutes until melted.
- Remove shrimp from the oven and place on a serving plate. Garnish with additional basil and serve with both sauces on the side for dipping.
