Sweet & savoury mango salsa, fiery scotch bonnet aioli and crispy pan-fried lemon pepper sole. Only thing missing is a few palm trees, lounging chairs and a sandy beach!

- 1 box High Liner Pan Sear Lemon Pepper Sole
For the Mango Salad
- 1 mango, diced
- 1/2, red pepper, diced
- ¼ cup red onion, diced
- 2 tbsp olive oil
- 1 lime, juiced
- 2 tbsp coriander, chopped
Scotch Bonnet Aioli
- 4 tbsp mayonnaise
- 2 tsp scotch bonnet hot sauce
- 2 tsp coriander, chopped
- Pan Sear High Liner Lemon Pepper Sole as per box directions.
- Combine salsa ingredients in a bowl, mix and season to taste.
- Mix scotch bonnet aioli ingredients in small bowl.
- Serve Pan Sear Lemon Pepper Sole with mango salsa, topped with aioli and pair with sweet potato fries.
