Lemon Pepper Island Sole

Sweet & savoury mango salsa, fiery scotch bonnet aioli and crispy pan-fried lemon pepper sole. Only thing missing is a few palm trees, lounging chairs and a sandy beach!

  • 1 box High Liner Pan Sear Lemon Pepper Sole

For the Mango Salad

  • 1 mango, diced
  • 1/2, red pepper, diced
  • ¼ cup red onion, diced
  • 2 tbsp olive oil
  • 1 lime, juiced
  • 2 tbsp coriander, chopped

Scotch Bonnet Aioli

  • 4 tbsp mayonnaise
  • 2 tsp scotch bonnet hot sauce
  • 2 tsp coriander, chopped
  1. Pan Sear High Liner Lemon Pepper Sole as per box directions.
  2. Combine salsa ingredients in a bowl, mix and season to taste.
  3. Mix scotch bonnet aioli ingredients in small bowl.
  4. Serve Pan Sear Lemon Pepper Sole with mango salsa, topped with aioli and pair with sweet potato fries.
