Glazed Teriyaki Salmon
This sweet and savory Teriyaki Salmon with vegetables is loaded with flavour and nutrition. Serve alongside rice or enjoy this dish on its own!

- 4 Wild Pacific Salmon Fillets
- 2 tbsp olive oil
- 1 cup baby carrots, halved widthwise
- 1 red pepper, cut into ½” chunks
- 1 cup snap peas
- Salt and pepper
- ½ cup water
- 2 tbsp low sodium soy sauce
- 2 tbsp honey
- 1 tbsp vinegar
- ½ tsp minced ginger
- ½ tsp minced garlic
- 1 tbsp corn starch

- Remove salmon from freezer and cook according to package instructions.
- Heat a large skillet over medium-high heat. Add olive oil and chopped carrots, red pepper and snap peas. Cook and stir for 5-8 minutes, until crisp tender. Remove from pan.
- Add additional oil to pan if necessary and reduce to medium. Whisk together water, soy sauce, honey, vinegar, ginger, garlic and corn starch. Let sauce cook 1-2 minutes until thickened.
- Plate salmon and veggies and pour sauce on top.
- Sprinkle with sesame seeds and green onions to serve. Add rice if desired.
