Mediterranean-Style Haddock Pasta

This recipe is all about quick and easy. Seriously, it doesn’t get any easier or better than this Mediterranean pasta with cherry tomatoes, kalamata olives and feta, topped with heavenly haddock fillets.

  • 2 Signature Cuts™ English Style Haddock Fillets
  • 250g spaghetti
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • ½ cup breadcrumbs
  • 1 cup parsley, chopped
  • 1 tsp chili flakes
  • ¼ tsp salt
  • ¾ cup cherry tomatoes
  • ¼ cup kalamata olives
  • ¼ cup feta cheese
Tips from the chef: DIRECTIONS
  1. Preheat your oven at 450°F. Bake the fish for 27 minutes, turning once.
  2. In a large frying pan, pour in the olive oil and heat over medium heat, add the garlic and cook for 30 seconds stirring often.
  3. Add the breadcrumbs, parsley, chili flakes, salt, tomatoes and olives. Cook for 5 minutes stirring frequently and set aside.
  4. Cook the spaghetti until al dente, about 11 minutes.
  5. Drain and mix with the tomato and kalamata mixture.
  6. Top with feta and serve with the haddock fillets.
