Roasted Garlic and Herb Haddock with Pomegranate Salsa

  • 1 package High Liner Roasted Garlic and Herb Haddock Pan-Sear Selects

Salsa

  • 1 cup fresh pomegranate arils
  • 1 tbs finely chopped fresh cilantro
  • 1 tbs finely chopped red onion
  • 1 tbs jalapeno, cored and finely chopped
  • 1 tbs juice of lime
  • Pinch each of ground cumin, Kosher salt and freshly cracked black pepper

Sautéed Swiss Chard

  • 3 cups Rainbow swiss chard, chopped
  • ¼ cup pomegranate juice
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • ½ Avocado, sliced
  1. Cook High Liner Roasted Garlic and Herb Haddock Pan-Sear Selects according to package instructions.
  2. Meanwhile, add all salsa ingredients together in a large mixing bowl and toss until evenly combined.
  3. Heat the preferred oil in a sauté pan on medium high heat. Add garlic, and cook for about 30 seconds, or until the garlic is fragrant. Add the chopped Swiss chard and cook for 3 to 4 more minutes. Finish with pomegranate juice.
  4. Transfer the sautéed swiss chard to a platter and arrange fish on side, topped with the pomegranate salsa. Garnish your plate with sliced avocado.
