Roasted Garlic and Herb Haddock with Pomegranate Salsa

- 1 package High Liner Roasted Garlic and Herb Haddock Pan-Sear Selects
Salsa
- 1 cup fresh pomegranate arils
- 1 tbs finely chopped fresh cilantro
- 1 tbs finely chopped red onion
- 1 tbs jalapeno, cored and finely chopped
- 1 tbs juice of lime
- Pinch each of ground cumin, Kosher salt and freshly cracked black pepper
Sautéed Swiss Chard
- 3 cups Rainbow swiss chard, chopped
- ¼ cup pomegranate juice
- 1 clove garlic, minced
- 1 tbsp olive oil
- ½ Avocado, sliced
- Cook High Liner Roasted Garlic and Herb Haddock Pan-Sear Selects according to package instructions.
- Meanwhile, add all salsa ingredients together in a large mixing bowl and toss until evenly combined.
- Heat the preferred oil in a sauté pan on medium high heat. Add garlic, and cook for about 30 seconds, or until the garlic is fragrant. Add the chopped Swiss chard and cook for 3 to 4 more minutes. Finish with pomegranate juice.
- Transfer the sautéed swiss chard to a platter and arrange fish on side, topped with the pomegranate salsa. Garnish your plate with sliced avocado.
