Pan-Sear Haddock With Maple-Dijon Green Beans & Pomegranate

- 4 each High Liner Pan-Sear Selects Traditional Haddock Fillets
- 2 cup Green Beans (trimmed)
- 0.5 cup Pomegranate, seeds
- 0.5 cup Goat Cheese (crumbles)
For the Dressing
- 2 tbsp Maple Syrup
- 2 tbsp Dijon Mustard
- 0.25 cup Cider Vinegar
- 1 cup Olive Oil
- 1 tbsp Parsley, chopped (chopped)
- Pan sear haddock as per box directions.
- Blanch green beans in boiling salted water for 30 - 60 seconds. Drain and cool in ice water to prevent over cooking.
- Add dressing ingredients to a jar and shake vigorously until combined. Alternatively add ingredients to a high speed blender and slowly pour in olive oil until emulsified.
- Dress green beans and if desired add more dressing to the plate. Garnish with pomegranate and goat cheese and top with pan seared haddock.
