Roasted Garlic and Herb Haddock with Couscous Salad

  • 1 package High Liner Roasted Garlic and Herb Haddock Pan-Sear Selects®

Couscous Salad

  • 200ml couscous
  • 200ml hot low salt vegetable stock
  • 2 spring onions, sliced
  • 1/10 cup sliced onion
  • 1 red pepper, sliced
  • ½ cucumber, diced
  • 2 tbsp feta cheese, crumbled
  • 2 tbsp pesto
  • 2 tbsp pine nuts
  1. Cook High Liner Roasted Garlic and Herb Haddock Pan-Sear Selects according to package instructions.
  2. Place couscous into a bowl, add hot stock, cover and leave for 10 mins until fluffy and all the stock has been absorbed.
  3. Add the veggies to the couscous, fork through the pesto, crumble in the feta, then sprinkle over with pine nuts.
  4. Transfer Couscous salad to a platter and arrange fish on top or side.
