- 1 package High Liner Roasted Garlic and Herb Haddock Pan-Sear Selects®
Couscous Salad
- 200ml couscous
- 200ml hot low salt vegetable stock
- 2 spring onions, sliced
- 1/10 cup sliced onion
- 1 red pepper, sliced
- ½ cucumber, diced
- 2 tbsp feta cheese, crumbled
- 2 tbsp pesto
- 2 tbsp pine nuts
- Cook High Liner Roasted Garlic and Herb Haddock Pan-Sear Selects according to package instructions.
- Place couscous into a bowl, add hot stock, cover and leave for 10 mins until fluffy and all the stock has been absorbed.
- Add the veggies to the couscous, fork through the pesto, crumble in the feta, then sprinkle over with pine nuts.
- Transfer Couscous salad to a platter and arrange fish on top or side.
