Roasted Garlic and Herb Haddock with Herbed rice and lemon

  • 1 package High Liner Roasted Garlic and Herb Haddock Pan-Sear Selects®

Herbed rice

  • 3 cups reduced-sodium chicken broth or vegetable broth
  • 1-1/3 cups uncooked long grain rice
  • 1 can (4 ounces) chopped green chilies, drained
  • 3/4 teaspoon salt
  • 1 tablespoon each minced fresh parsley, cilantro, and chives
  • 1/2 teaspoon grated lemon zest
  • Tzatziki sauce (optional)
  • Lemon slices
  1. Cook High Liner Roasted Garlic and Herb Haddock Pan-Sear Selects according to package instructions.
  2. In a large saucepan, combine the broth, rice, chilies, and salt; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until rice is tender. Remove from the heat; let stand for 5 minutes. Fluff with a fork and stir in the remaining ingredients.
  3. Transfer rice mixture to a platter and arrange fish on top.
  4. Garnish with Tzatziki sauce over the fish (optional) and serve with lemon slices.
