Salmon Nourish Bowl Drizzled With Lemon Sauce

Salmon

  • 4 Wild Pacific Salmon Fillets, frozen
  • 1 tbsp olive oil
  • salt and pepper

Lemon Sauce

  • ¼ cup mayonnaise
  • ¼ cup full-fat greek yogurt
  • Zest of 1 lemon + 5 tsp juice
  • ¼ tsp kosher salt
  • 1 tbsp olive oil

Bowls

  • 1 lb/ 454g soba noodles
  • 1 cup cooked chickpeas
  • 1 cup thinly sliced cucumber
  • 1 cup sliced pineapple
  • 1/4 cup thinly sliced red onion
  • 1/4 cup pumpkin seeds
  • 1/4 cup sliced pickled turnip or beet (optional)
  1. Preheat oven to 450ºF. Place High Liner Salmon Signature Cuts Salmon Fillets on a parchment-lined baking sheet. Brush with oil and sprinkle with salt and pepper. Bake 20 minutes.
  2. While fish is baking, prepare sauce by whisking together all ingredients.
  3. Cook soba noodles in salted, boiling water according to package instructions. Transfer to a colander and rinse under cold water until cool.
  4. Divide noodles among four bowls and top with remaining ingredients. Place a salmon fillet on each bowl and drizzle with sauce.
