Mediterranean Salmon with Roasted Red Pepper Pesto and Broccoli Pasta
This roasted red pepper pesto dish is an easy dish to whip up over during the week.

- 1 box High Liner Foods Mediterranean Salmon
- 1 900g bag penne pasta
- 1 340ml Roasted Red Pepper jar, drained and cut into strips
- 1 Red Pepper, julienne
- ½ head of broccoli, small florets
- 1 270ml Roasted Red Pepper Pesto Jar
- ¼ cup Black olives, sliced (optional – for garnish)
- Fresh Basil (optional – for garnish)
- Parmesan (optional – for garnish)
- Prepare Mediterranean Salmon according to package instructions.
- Cook pasta in a pot of generously salted boiling water, stirring occasionally until “al dente”. Reserve ½ cup pasta stock water.
- Preheat large pan to medium heat olive oil, sauté roasted red peppers, broccoli, and red peppers for a minute. Stir in pesto and pasta. If needed pasta stock water may be added a little at a time to adjust consistency. Cook for 3-5 minutes and serve.
- Garnish with sliced black olives, fresh basil leaves and parmesan. Slice cooked fish and serve on top of pasta.
