Cajun Baked Salmon Salad

This salmon recipe will spice up your usual dinner with a touch of Cajun pepper. Spicy and flavourful salmon fillets with a refreshing green salad will make your senses tickle.

  • 1 package High Liner IQF Wild Pacific Salmon, thawed
  • 1 pint strawberries, sliced
  • 1 lrg avocado, sliced
  • ½ cup feta cheese, crumbled
  • 4 cups baby spinach
  • 1 small red onion – sliced
  • ½ cup pecan pieces
  • 4 tsp Cajun spice
  • 4 tsp olive oil

For the dressing

  • 1 cup Greek yogurt
  • 2 ½ tbsp lemon juice
  • ½ tsp Lemon zest
  • 1 tbsp Honey
  • Minced parsley 1 tsp
  • Salt & pepper to taste
  1. Preheat oven to 375F and place thawed salmon portions onto a baking sheet lined with parchment paper. Combine oil and Cajun spices and using a pastry brush apply approx. 1tsp of this spice mixture onto each portion of salmon. Bake in oven for 5-8min or until done.
  2. Place pecans on a oven tray and roast along side salmon. If desired roast red onions as well
  3. Combine salad dressing ingredients. If too thick, simply thin out using a bit of milk and season to taste.
  4. Place spinach, strawberries, avocado and red onions in a bowl and gently toss with desired amount of salad dressing. Garnish with feta cheese, pecans and top with Cajun roasted salmon.
