Cajun Baked Salmon Salad
This salmon recipe will spice up your usual dinner with a touch of Cajun pepper. Spicy and flavourful salmon fillets with a refreshing green salad will make your senses tickle.

- 1 package High Liner IQF Wild Pacific Salmon, thawed
- 1 pint strawberries, sliced
- 1 lrg avocado, sliced
- ½ cup feta cheese, crumbled
- 4 cups baby spinach
- 1 small red onion – sliced
- ½ cup pecan pieces
- 4 tsp Cajun spice
- 4 tsp olive oil
For the dressing
- 1 cup Greek yogurt
- 2 ½ tbsp lemon juice
- ½ tsp Lemon zest
- 1 tbsp Honey
- Minced parsley 1 tsp
- Salt & pepper to taste
- Preheat oven to 375F and place thawed salmon portions onto a baking sheet lined with parchment paper. Combine oil and Cajun spices and using a pastry brush apply approx. 1tsp of this spice mixture onto each portion of salmon. Bake in oven for 5-8min or until done.
- Place pecans on a oven tray and roast along side salmon. If desired roast red onions as well
- Combine salad dressing ingredients. If too thick, simply thin out using a bit of milk and season to taste.
- Place spinach, strawberries, avocado and red onions in a bowl and gently toss with desired amount of salad dressing. Garnish with feta cheese, pecans and top with Cajun roasted salmon.
