Roasted Adobo Salmon and Corn Salad
Try this delicious salmon bathed in aromatic adobo coating and roasted to perfection. Complement it with a healthy corn salad and you will have an amazing dinner served on your table tonight.

Preparation
Adobo Salmon
- 4 Salmon Fillets, thawed over night
- ½ cup Onion, diced
- 2 Garlic Cloves
- ¼ cup Chipotles in Adobo
- ¼ cup Tomato Paste
- 1 tbsp Cumin
- 1 tbsp Chili Powder
- 2 tbsp Honey
- 2 tbsp Lime Juice
- 2 tbsp Olive Oil
Corn Salad
- 1 cup Black Beans, rinsed and strained
- 2 cups Corn Kernels
- ½ cup Red Onion, small diced
- ½ cup Scallions, minced
- ½ cup Red Bell Peppers, small diced
- ½ cup Cotija Cheese or Queso Fresco
- ½ cup Mayonaise
- 1 Lime
- Preheat oven to 190C.
- For the Salmon place all of the adobo ingredients into a blender and puree until mostly smooth. Slather all over Salmon and either bake immediately on an aluminum lined bake sheet or prep up to 4 hours in advance before baking.
- For the Salad gather all ingredients into a bowl and mix well.
- Bake the Salmon for approximately 15 minutes until desired temp and serve atop the salad. Garnish with additional red onion, cilantro and radishes if desired.
