For the Fish
- 4 High Liner Signature Cuts Crispy Breaded Cod Fillets
For the Salad
- 3 Carrots (Heirloom, ribbons)
- 180 g Baby Arugula
- 1/4 cup Parmesan Shavings
- 1 tbsp Pumpkin Seeds (roasted)
For the Vinaigrette
- 1/4 cup Lemon, juice
- 2 tbsp Maple Syrup
- 2 tbsp Dijon Mustard (for flavour and emulsification)
- 1 tbsp Parsley (fresh, chopped, or substitute 1 tsp dry)
- 1 cup Extra Virgin Olive Oil
- Cook High Liner Crispy Cod per package instructions.
- Using a horizontal peeler or mandolin slice the carrots into ribbons. Slice ribbons in half or into suitable sizes.
- Add lemon juice, maple syrup, olive oil, Dijon mustard and chopped parsley to a bowl and whisk until emulsified.
- Add carrot ribbons, parmesan shavings and arugula to a bowl and toss with dressing. Serve in a bowl garnished with pumpkin seeds and topped with crispy breaded cod
