Crispy Breaded Cod With Carrot Ribbon Salad & Citrus-Maple Vinaigrette

For the Fish

  • 4 High Liner Signature Cuts Crispy Breaded Cod Fillets

For the Salad

  • 3 Carrots (Heirloom, ribbons)
  • 180 g Baby Arugula
  • 1/4 cup Parmesan Shavings
  • 1 tbsp Pumpkin Seeds (roasted)

For the Vinaigrette

  • 1/4 cup Lemon, juice
  • 2 tbsp Maple Syrup
  • 2 tbsp Dijon Mustard (for flavour and emulsification)
  • 1 tbsp Parsley (fresh, chopped, or substitute 1 tsp dry)
  • 1 cup Extra Virgin Olive Oil
  1. Cook High Liner Crispy Cod per package instructions.
  2. Using a horizontal peeler or mandolin slice the carrots into ribbons. Slice ribbons in half or into suitable sizes.
  3. Add lemon juice, maple syrup, olive oil, Dijon mustard and chopped parsley to a bowl and whisk until emulsified.
  4. Add carrot ribbons, parmesan shavings and arugula to a bowl and toss with dressing. Serve in a bowl garnished with pumpkin seeds and topped with crispy breaded cod
