Buffalo Shrimp Sweet Corn Fritters + Fiery Frank's Aioli

Calling all corn lovers! These spicy bites are the perfect snack, but also great for lunch, dinner and all the in between times. The buffalo crunch and sweet corn are a match made in heaven and the creamy aioli keeps them happy together.

  • 1 box Buffalo Shrimp
  • 3 cups Corn Kernels
  • 1 cup Flour
  • 1 tbsp Sugar
  • 2 tsp Baking Powder
  • 2 ea Eggs
  • ½ cup Milk
  • ¼ cup Olive Oil
  • ½ cup Fresh Herbs or Greens

Fiery Frank’s Aioli

  • 1 cup Mayonnaise
  • 1 tbsp. Garlic, minced
  • 2 tbsp. Frank’s Hot Sauce
  • 2 tsp. Paprika
  • 2 tsp. Soy Sauce
  1. Prepare the shrimp according to the package instructions.
  2. In a large bowl add the corn, flour, sugar, baking powder and mix well. Make a well in the center and add the eggs and milk. Using a spatula mix well.
  3. Heat a large non-stick saute pan with the olive oil. Add approximately 1/3 cup of batter to make each fritter. Cook on each side for approximately 2 minutes until cooked through.
  4. Mix the mayonnaise, garlic, frank’s, paprika and soy sauce together in a small bowl.
  5. Serve the fully cooked shrimp alongside the corn fritters. Drizzle liberally with the aioli and garnish with fresh herbs or salad greens.
