English Style Battered Haddock w/ Potato Chip Salad
- 1 box Signature Cuts English Style Haddock
- 1 cup Red & Green Cabbage, cut ¼” thick
- 2 cups Romaine Lettuce, cut ½” thick
- ½ cup Shredded Carrots
- ½ cup Red Onion
- ¼ cup Chives, minced
- 1 cup Potato Chips, crushed slightly
Malt-Mustard Vinaigrette
- 2 tbsp. Grain Mustard
- 2 tbsp. Honey
- 2 tbsp. Malt Vinegar
- 2 tbsp. Shallots, minced
- 2 tsp. Garlic, minced
- ½ cup Olive Oil
- Prepare Signature Cuts Haddock according to package instructions.
- For vinaigrette: Add all ingredients except oil to a bowl. Whisk briskly and slowly drizzle in olive oil.
- Gather & cut veggies and toss together with crushed potato chips.
- Top salad with fully cooked Haddock and serve vinaigrette on size or drizzled across the salad.
