  • 1 box High Liner Signature Cuts Haddock Crispy Breaded Fillets

Salad

  • 2-3 cups arugula​
  • ½ cup cooked quinoa
  • ½ cup feta cheese
  • ½ cup of walnuts

Potato

  • 2 large sweet potatoes (peeled and diced)
  • 1 ½ tbsp olive oil​
  • Salt and pepper to taste​

Vinaigrette Dressing

  • ½ tsp Dijon mustard​
  • 1 tbsp honey​
  • 2 tbsp fresh lemon juice​
  • ½ tsp dried parsley
  1. Preheat oven and bake the High Liner Signature Cuts Haddock Crispy Breaded Fillets according to package instructions.​
  2. Dice sweet potato and place in a bowl, drizzle with olive oil, sprinkle with salt and pepper. Toss well to coat. Place onto a baking tray bake for 20 minutes at 450°F.​
  3. Prepare vinaigrette dressing by mixing Dijon mustard, honey, lemon and parsley in a small bowl.
  4. Put the arugula in a large bowl and pour in the sweet and zesty lemon dressing. Toss it well before serving.
  5. Assemble your salad with one layer of cooked quinoa, followed by the arugula and the sweet potatoes. Add feta cheese and walnuts.
  6. Place High Liner Signature Cuts Haddock Crispy Breaded Fillets on top of your salad and enjoy!
