- 1 box High Liner Signature Cuts Haddock Crispy Breaded Fillets
Salad
- 2-3 cups arugula
- ½ cup cooked quinoa
- ½ cup feta cheese
- ½ cup of walnuts
Potato
- 2 large sweet potatoes (peeled and diced)
- 1 ½ tbsp olive oil
- Salt and pepper to taste
Vinaigrette Dressing
- ½ tsp Dijon mustard
- 1 tbsp honey
- 2 tbsp fresh lemon juice
- ½ tsp dried parsley
- Preheat oven and bake the High Liner Signature Cuts Haddock Crispy Breaded Fillets according to package instructions.
- Dice sweet potato and place in a bowl, drizzle with olive oil, sprinkle with salt and pepper. Toss well to coat. Place onto a baking tray bake for 20 minutes at 450°F.
- Prepare vinaigrette dressing by mixing Dijon mustard, honey, lemon and parsley in a small bowl.
- Put the arugula in a large bowl and pour in the sweet and zesty lemon dressing. Toss it well before serving.
- Assemble your salad with one layer of cooked quinoa, followed by the arugula and the sweet potatoes. Add feta cheese and walnuts.
