  • 6 ea Signature Cuts Southern Style Cod
  • 6 ea Corn Tortilla
  • 3/4 cup Queso Fresco, crumbled
  • 1/2 cup Cilantro, leaves lightly packed
  • 2 ea Lime, wedge
  • 4 ea Radish, sliced thin

Pickled Red Onion

  • 1 ea Red Onion, sliced
  • 1 cup Red Wine Vinegar
  • 2 tbsp Sugar
  • 1 tbsp Kosher Salt

Sweet Corn

  • 300 g Frozen Corn
  • 1 tbsp Olive Oil
  • 2 tbsp Honey
  • 1 tbsp Hot Sauce
  • Salt And Pepper to taste
Tips from the chef: These Southern Style Tacos are perfect for customizing to your and your families taste. Not a fan or crisp fresh radish? Simply remove and replace them with your favourite taco ingredients like salsa, shredded cheese or creamy avocado.
  1. For the Pickled Red Onion: Rub the salt and sugar into the sliced onions briefly and set aside in a small bowl. Pour over the vinegar and allow to sit and marinate, stirring occasionally.
  2. For the Cod: Prepare the Cod according to the package instructions.
  3. For the Sweet Corn: Preheat a large sauté pan over a medium-high setting. Add the olive oil to the pan along with the corn. Cook for two minutes, stirring often, until the corn has charred slightly. Add the honey, hot sauce and season to taste with salt and pepper before mixing well and shutting off the heat.
  4. To Assemble & Finish: Carefully char the tortillas over an open flame for approximately 20 seconds per side. Alternatively, warm the tortillas gently in a preheated sauté pan. Assemble the tortillas with a fully cooked portion of Cod and a generous serving of sweet corn. Garnish with tacos with the radish, cilantro, queso and lime.
